Have you ever had a yearning for ice cream only to realise that you either don't have an ice cream maker or—gasp—you forgot to put the insert in the freezer beforehand?
I'd like to introduce you to semifreddo, which is my absolute favourite frozen delicacy! This no-bake, frozen beauty is just like the creamiest ice cream you've ever tasted, and it comes in a distinctive, sliceable, and decorateable container that's ideal for sharing.
INGREDIENTS:1/4 c. mayonnaise2 Tbsp. ketchup1 Tbsp. sweet pickle relish1 Tbsp. yellow mustard1 tsp. hot sauce
INGREDIENTS:1 lb. ground beef6 (5") flour tortillas2 tsp. store-bought or homemade burger seasoningKosher salt6 Tbsp. neutral oil, divided6 slices American cheese, divided18 thin bread-and-butter pickle slices1 c. shredded iceberg lettuce3 Tbsp. chopped yellow onionWhite sesame seeds, for serving
Step 1: In a small bowl, add mayonnaise, ketchup, relish, mustard, and spicy sauce.
DIRECTIONS FOR BURGER SAUCE:
Step 2: Prepare sauce up to 3 days ahead of time. Cover the bowl and refrigerate.
Step 1: Cut beef into 6 chunks of 2 1/2 ounces each. Top each tortilla with a serving of steak. Using a fork, flatten the beef on top of the tortilla, leaving a 1/2-inch border. Sprinkle with 1/2 teaspoon hamburger seasoning and a pinch of salt.
DIRECTIONS FOR SMASH BURGER TACOS:
Step 2: In a large skillet over medium-high heat, heat 2 tablespoons oil and swirl to coat. Arrange two tacos, beef side down, in a skillet and flatten with a sturdy spatula or burger press.
Step 3: Cook until the steak is browned and cooked thoroughly, about 2 to 3 minutes. Flip tacos, add a slice of cheese to each, and heat for another 1 minute, or until cheese is slightly melted. Transfer to a baking sheet. Repeat with the remaining four hamburger tacos.
Step 4: Top each taco with burger sauce, pickles, lettuce, onion, and sesame seeds.
