Easiest Mini Cheese Ball Bites Recipe

These bites will make your guests want to return time and time again, whether you're serving them as a Christmas appetiser or a game day snack.

Feel free to replace the cheddar with another of your favourite cheeses. I chose a cream cheese and cheddar mix since the two together create a pleasant creamy, somewhat sharp bite.

INGREDIENTS: 1 1/2 (8-oz.) blocks cream cheese, softened 1 c. shredded cheddar 1 tsp. garlic powder 1 tsp. paprika Kosher salt Freshly ground black pepper 8 slices bacon 1/3 c. roasted salted pecans, finely chopped 1/3 c. fresh chives, chopped 18 pretzels sticks

Step 1: Combine cream cheese, cheddar, paprika, and garlic powder in a big bowl. Add salt and pepper to taste. 

DIRECTIONS:

Step 2: Form mixture into eighteen (1-inch) tiny balls with a cookie scoop, then place on a baking sheet lined with paper. Chill for approximately one hour or until solid.

Step 3: In the meantime, fry bacon in a large nonstick skillet over medium heat for about 8 minutes, flipping it occasionally, until it gets crispy. 

Step 4: After draining onto a plate covered with paper towels, move to a chopping board and roughly chop.

Step 5: Combine bacon, pecans, and chives in a small bowl.

Step 6: Before serving, roll each ball in the bacon-pecan mixture, stick a pretzel stick inside, and allow to come to room temperature for fifteen minutes.
