Cabbage not only makes a fantastic side dish, but it also works well as a main course. Although we treat ours well, these steaks are incredibly adaptable. Start by grilling a few, then add your toppings and start grilling!
You can experiment to discover your perfect cabbage soulmate, but grilled cabbage makes a great "blank canvas" for implementing any other flavours you may be passionate about.
For a spicy twist, top it with prik nam pla, garlicky romesco, or spoonfuls of honey mustard dressing. A caprese-style cabbage, a buffalo-style cabbage, or a grilled cabbage seasoned with lemon and garlic are all excellent alternatives. You truly can't make a mistake!
INGREDIENTS:1 large head of cabbage, cut into ½"-thick rounds
Extra-virgin olive oil, for brushing
Kosher salt
Freshly ground black pepper
Pinch crushed red pepper flakes
Chopped cooked bacon, for serving
Crumbled blue cheese, for serving
Freshly chopped scallions, for serving
Ranch dressing, for serving
Step 1: Grill at a medium-high temperature. Season cabbage steaks with salt, pepper, and red pepper flakes after brushing them with oil on both sides.
DIRECTIONS:
Step 2: Place on grill and cook for about 5 minutes on each side, or until tender.
Step 3: Before serving, sprinkle bacon, blue cheese, and scallions on top and pour ranch dressing over it.
