INGREDIENTSFOR PEACH SIMPLE SYRUP:1 1/2 lb. fresh peaches (about 3), peeled, sliced
2 c. (400 g.) granulated sugar
TEA
6 black tea bags
1/2 c. (or more) bourbon
Ice
1 fresh peach, sliced
Step 1: Bring the sugar, two cups of water, and peaches to a boil in a medium-sized pot over medium heat. Cook for 10 to 15 minutes, stirring periodically, or until peaches are totally soft. Allow to cool.
DIRECTIONS FOR PEACH SIMPLE SYRUP:
Step 2: Pour the syrup through a fine-mesh strainer, squeezing the peaches to extract additional juice with a spoon. When not in use, store in a refrigerator-safe container that is tightly sealed.
Step 3: Prepare ahead of time: Make the syrup a month in advance. Store in the refrigerator.
DIRECTIONS FOR TEA:
Step 1: Boil 4 cups of water in a medium pot or kettle. Take off the heat and put the tea bags in. Steep for 5-8 minutes. Throw away the tea bags.
Step 2: Fill a heat-resistant pitcher with tea. Stir together 1 cup peach simple syrup and 4 cups water. Allow to cool.
Step 3: Add the bourbon when ready to serve. If necessary, adjust the flavor with extra simple syrup or bourbon.
