A typical soft serve from an ice cream truck consists of granulated sugar soaked in heavy cream and milk, which is then spun in an ice cream machine to produce an airy, pipeable texture. But I wanted to make a recipe that didn't require a specialized machine.
After a lot of trial and error, I came up with the easy solution of dissolving granulated sugar in heavy cream, chilling it until cold, whipping it till light and fluffy, and mixing in a small bit of condensed milk.
INGREDIENTS:2 c. heavy cream1/2 c. (100 g.) granulated sugar3/4 tsp. kosher salt1 1/2 tsp. pure vanilla extract1/4 c. sweetened condensed milk, room temperature4 to 6 ice cream cones (optional)Rainbow sprinkles, for serving (optional)
Step 1: Heat cream, sugar, and salt in a medium pot over medium heat. Stir regularly until sugar dissolves, about 1 to 2 minutes. Stir in the vanilla.
DIRECTIONS:
Step 2: Transfer cream mixture to a freezer-safe container, ideally plastic. Freeze for 1 to 2 hours or until cold but not frozen.
Step 3: Use a handheld mixer on medium-high speed to beat cream until stiff peaks form (about 7-10 minutes). Drizzle with sweetened condensed milk and fold to blend.
Step 4: Return the soft serve to the freezer and freeze for another 2 to 4 hours.
Step 5: Use a piping bag with a large star tip (optional) to pipe soft serve into cones. Sprinkles can be added on top if desired.
