Tomato Bruschetta Recipe For Perfect Toasted Baguette
This dish is ideal to serve because it's simple to prepare and composed of traditional ingredients. This appetiser is best enjoyed in the summer when fresh tomatoes are at their best, but it can be made any time of year.

INGREDIENTS FOR TOMATOES:1/4 c. extra-virgin olive oil
2 cloves garlic, thinly sliced
4 large tomatoes, finely chopped
Kosher salt
1/4 c. thinly sliced fresh basil
2 Tbsp. balsamic vinegar
Pinch of crushed red pepper flakes
INGREDIENTS FOR BREAD & ASSEMBLY:1 large baguette, sliced 1/4" thick on the bias
Extra-virgin olive oil, for brushing
2 cloves garlic, halved
Step 1: Heat the oil in a medium skillet over medium-low heat. Add the garlic and heat for 2 to 4 minutes, stirring now and again, until it becomes softly golden. Allow to cool.
DIRECTIONS FOR TOMATOES:
Step 2: Place a large colander or strainer over a bowl in the interim. Toss in the tomatoes and half a teaspoon of salt.
Step 3: Sit for five minutes. Move the tomatoes into a big basin. Toss to mix in the basil, vinegar, red pepper flakes (crushed), and 1/2 tsp. salt. Toss again to mix in the oil from the skillet and the garlic. Marinate for a minimum of 30 minutes and a maximum of 2 days.
DIRECTIONS FOR BREAD & ASSEMBLY:
Step 1: Turn the oven on to 400°. Spread bread on a large baking pan, brushing both sides with oil.
Step 2: Toast the bread for 10 to 15 minutes, turning it halfway through, until it's golden brown and dried out. After allowing the bread to cool for five minutes, massage one side with the cut garlic cloves.
Step 3: Just before serving, arrange the bread on a tray and place the tomatoes on the side that has been smeared with garlic.
