Whipped Feta With Balsamic Roasted Strawberries Recipe
We suggest making the whipped feta and strawberries several hours or even a day ahead of time if you're making this dish for a gathering. Until you're ready to serve them, make sure they remain apart.
INGREDIENTS:1 lb. fresh strawberries, stems removed, halved
3 Tbsp. balsamic vinegar
1 Tbsp. honey
8 oz. feta in brine, drained, cut into small cubes
6 oz. mascarpone or cream cheese (about 3/4 c.), room temperature
Freshly ground black pepper
2 Tbsp. extra-virgin olive oil, plus more for drizzling
Chopped fresh basil and crackers or toast, for serving
Step 1: Turn the oven on to 350°. Spread parchment paper on a sizable baking sheet. On the prepared sheet, distribute the strawberries.
DIRECTIONS:
Step 2: Combine the honey and vinegar in a small bowl. Pour over the strawberries, then toss to mix. Distribute evenly across the layer.
Step 3: Roast strawberries for 25 to 30 minutes, or until they begin to soften and exude juices. Allow to cool.
Step 4: In the meantime, pulse the feta in a food processor until it resembles tiny crumbs. After adding the mascarpone and a dash of pepper, pulse again until well blended.
Step 5: Add oil gradually while the engine is running and blend until smooth and fluffy.
Step 6: Spoon feta mixture into a serving basin. Sprinkle some pepper on top, then add the cooled strawberries and basil. Drizzle with oil. Serve with crackers on the side.
